This delicious RAW, gluten, dairy and sugar free slice is Very Berry YUMMY!
Ingredients - Base
3/4 cup crushed macadamia nuts or walnuts (or a combination of both)
1/4 cup shredded coconut (dried unsweetened)
Ingredients - Filling
2 cups strawberries at room temperature (or any berries of your choice)
1 cup raw cashews
2 tablespoons vanilla extract
4 tablespoons Ephraim Health Manuka Honey
1 pinch salt
1 cup coconut oil, melted
Directions
Base: Throw crushed nuts and coconut into your food processor. Process briefly until mixture resembles coarse bread crumbs. Press into bottom of a 22cm pie dish, building up the sides slightly. Set aside.
Filling: Place all filling ingredients into your food processor and blend until smooth and creamy. Carefully pour on top of base and refrigerate for 3 hours or until set.
