This is such a gorgeously yummy completely raw, gluten free, cane sugar free, egg free delight! Perfect for any one who has allergies to gluten or eggs. Enjoy!
Ingredients - Cake Mix
400g Dates
300g Cashews
1 Ripe Avocado
100g Raw Cacao Powder
2 Scoops of E-Healths Baobab Powder
¼ cup of E-Healths Raw Coconut Oil (melted)
2 tablespoons of E-Healths Manuka Honey (melted)
Filling/Topping
500g Cream Cheese
100g Butter (softened)
2 tablespoons of E-Healths Manuka Honey (melted)
4 teaspoons of E-Healths Maca Powder
500g Mixed Berries
Directions
Cake : Soak the dates in hot water for 30mins, then drain thoroughly
Place cashews, melted honey, melted coconut oil in a food blender and blitz until smooth.
Add dates, the flesh of the avocado, Baobab Powder then blitz until fully blended
Add cacao powder in gradually, blending thoroughly
Line a 15cm round cake tin with removable bottom
Put 1/3 of the mixture into the tin and spread evenly then put in freezer while you prepare the filling
Filling/topping:
Place the softened butter, cream cheese, melted Manuka Honey and Maca Powder in a mixing bowl and mix with a fork until fully blended and creamy
Spread 1/3 of the filling mix onto the cake mix then spread 1/3 of the berries on top. Freeze for 10 mins
Spread another layer of 1/3 of cake the mix evenly on top, then another 1/3 of the filling and 1/3 of berries. Freeze for 10 mins
Add final layer of cake mix, top with final 1/3 of filling and decorate with the remaining berries. Freezer for final 10 mins.
